Hi - My husband was diagnosed with Type 2 diabetes August 2009 and is having difficulty coming to terms with the fact that the actually does have diabetes. He is meant to be diet-controlled. I have joined this forum seeking help in regards to his diet. He had a small stroke 5 weeks ago which is possibly connected to the diabetes and may mean that he has not been controlling his diabetes properly. The biggest problem I have is working out what meals to cook as most meals contain starches, eg potatoes. Are boiled potatoes okay?

Thanks in advance.

Hi and welcome to the forum

its not at all uncommon for people to be in denial about diabetes especially a T2 who doesnt need insulin. The best advice I can give you regarding meal plans is to read the Information for Newly Diagnosed Diabetics you will find it HERE. You may not be able to get your husband to check his blood sugars regularly, if at all, but by cutting back on the carbohydrates he is eating it will definitely help bring his numbers down.

Smaller portions will help, if you buy or use some smaller diner plates so it looks like he is getting a full plate and increase his vegies while cutting back on his starchy carbs, potatoes, rice, pasta and bread. Choosing wholemeal or wholegrain breads over white bread and basmati rice (the kind you eat in Indian restaurants) over ordinary white rice will also help, many of us find that Burgen bread doesnt cause our blood sugars to soar and it is available in all supermarkets, of course your husband might wonder why his sandwiches have changed colour but who knows, he may even like it
