As I had a quiet morning planned on Saturday I decided it was time to test my readings before and after breakfast. I ate a breakfast I often have during the week. I don't really have time to test during the week as I have a long car commute to work. My reading pre-breakfast was 5.0 and my 2 hour reading was also 5.0. At face value that's pretty good and around the level I was expecting. But my 30 minutes reading was 8.1, my 1 hour reading was 9.5 and my 1.5 hour reading was 7.0. Are these intermediate readings too high even though my 2 hour reading is very good?

That's a hard one. Non-diabetics spike at about 1 hour, and these spikes can sometimes be quite high after a carby meal, although on average a normal non-diabetic is expected not to go higher than 7.8 at an hour and be below 6.6 at 2 hours. If you are comfortable with being that high for up to 2 hours every morning, then carry on. If not .... well, you know what to do! ;) Personally I would reduce the portion.
