Ice cream

Simplest of all is just double cream + strawberries - adjust amount of strawberries to taste. If it's not sweet enough, you could also add some bits of meringue, it's surprisingly low carb considering it's got so much sugar in it, but it's mostly air. A single meringue nest in pieces will only be 12g of carb and that would be enough for a whole pint of cream - which you probably aren't going to eat at one sitting as it's about 2,000 kCal.
 
I've been toying with the idea of getting an expensive ice cream maker and when the Aldi one was on offer I thought I'd try one. I made a vanilla ice cream just with double and single cream, vanilla extract and sweetener - replacing the sugar in a normal recipe I got off the web. It was super easy and the texture was fine straight from the ice cream maker but was too dense in the freezer. I think a custard base would have a less fatty feel (I had a coating of cold fat on the roof of my mouth!). A greek yoghurt base might also be better in that respect.

I am planning a rhubarb and custard ice cream and can't wait to do the lemon curd ice cream in the ditch the carbs list above, I read that when frozen ice cream is less sweet than the mixture (which makes sense when you think about it) so bear this in mind if you're 'making up recipes.

Ice cream is a necessity for me - not all the time, but LCHF will be so much easier to stick to if I can find some easy ice cream recipes
