Ok, I'm not sure what I'm doing wrong here. For the past 2 weeks I have been following the 16:8 diet - food fasting for 16 hours and eating normal LCHF meals in an 8 hour window. Yesterday I had a 24 hour food fast (not intentional) and was interested to see what my BS levels would be before I had my evening meal. Was surprised that it was as high as 6.7. Today I had a coffee with dollop of cream for breakfast (having not eaten since 7pm yesterday), 3 chicken chipolata sausages (Heck) with some guacamole for lunch and then did a pilates class after school. I tested BS when I got home and it is 7.3! Where am I going wrong?

Sounds like your liver is simply clearing out its glycogen store.

Don't think you are doing anything wrong..

I tried 16:8 for 3 months and my HbA1c increased. Obviously there may be other factors but I've stopped doing it and am back to 3 meals a day.

Thank you for this. Do you have any idea how long it will possibly take for BS to drop again? Should I keep up the 16:8? I find it easy to do and don't feel at all hungry, just hoping to see some benefits at some point!

It really depends on the individual condition. If there is more fats around the liver/pancreas, that it would require a much longer time to clear up and stabilize the fasting glucose. I was fortunate. After about 2 months of low carbing, it took me only 2 sessions of 16:8 (skip 2 dinner in my case) to get my fasting glucose down to the 5.5 mmol range. It was stuck between 7-8 mmol during the initial 2 months of low carbing.

Since then I have maintained my fasting BG around 5.5-6.0 mmol for the last 30+ months. Whenever FBG exceeds 6.5 mmol, I will skip dinner for a couple of days to bring it back down below 6.0 mmol. No exercise, no medication...no will power...
