I didn't know that about low carbs and low inflammation. I've certainly been taking far fewer painkillers. This time last year I think I was just about living on them.Low carbing loosely fits the anti-arthritis diets I've read about, and it definitely reduces general levels of inflammation... The only times I've had arthritis flare ups in my fingers and knuckles has been when carbing. All symptoms subside as soon as I get back on the straight and narrow and buttery.
I've no idea how bad your knees are too bad to improve, but I'm hoping they do, for your sake.
I totally agree with you this is the perfect time for you... enjoy!! The best thing I ever did was retire (initially didn't want to as I loved my last job (low paid compared to previous job with loads of pressure) but I've now got time to prepare food and research diet plans hence stumbling on LCHF which has helped me to lose weight. Not a huge amount listening to some success stories but slowly but surely it's coming off and I'm actually enjoying the food. Won't get my pension until I'm 66, so 5 years to go so live off husband's pension, but life is good and I love the long walks I can take with my dog without constantly looking at my watch because I'm trying to cram too many things into too few hours!Stress - don't get me started! When I was working I know I ate more, and all carbs, when I was stressed. Unfortunately, it was often a stressful job, hence the wight rise over the 27 years I did it.
I chucked it in in 2010 to travel for a year. It was the best thing I did and I've slowly lost weight since then. I don't want to go back to my old job, but am not qualified for a lot else and certainly not on the same wage. I'm earning bits here and there, while I try to become a published writer - oh, and living off my husband. I will be able to draw on my pension from 55 - so 3 more years from tomorrow!
So I do have the luxury of time to think about food, to prepare it, to get out with the dog - this is my perfect time to sort out my weight and reduce blood sugar & blood pressure.
I summoned up the courage to ring my diabetic nurse today. I've only met her 3 times since moving down to south Cambs. She is seriously scary. She'd written to me to say ring her and let her know how I'm getting on now I'm up to 3 Gliclazide. I had to tell her my knee op was cancelled due to high sugar levels, but then went on to tell her I'd joined this site and started a low carb diet. She was very positive and supportive. I was surprised.
Off to serve my delicious sea bream with salad now. Yum!

Well, my last posts on here were a year ago, but I am still trying and still having good and bad time with the ood. I too have to watch the snacking. I've stopped buying nuts. I am trying coffee with cream if I'm actually hungry, olives or a slice of cheese cut into small pieces to nibble while watching TV. I wonderful if I could strat a trend of mindful nibbling - deliberately aking tiny nibbes of cheese to make snacking last as long as possible.

I will try the mint tea. I think a strong flavour will be good to stop me snacking.I like the concept mindful nibbling.
I try not to do snacking, such a bad habit for me. Although not criticising anyone who does. I mean the habit of automatic grazing whilst concentrating on something else, like TV or reading. I drink water or mint tea instead now as it was so easy to over eat without realising it if my mind is on something else.
