Inconsistent readings

I'm a type 2 diagnosed in April this year on diet and exercise alone.
I pretty much eat an identical diet each day. Breakfast is eggs, bacon and mushrooms. Evening meal is grilled chicken with veg (no potatoes - I'm low carbing). Glass of wine (and perhaps some pork scratchings if I'm feeling particularly naughty) before bed. Even though I eat the same stuff every day I get inconsistent BG readings. Example:

Day 1 waking bg 5.2
1 hour after brekkie bg 7.1
2 hours after brekkie 6.0
3 hours after brekkie no measurement as figures look ok

Day 2 waking bg 6.5
1 hour after brekkie 7.1
2 hours after brekkie 7.4
3 hours after brekkie 7.3

There's no dietary difference between the days. Is there any known explanation for this or is it just one of the vagaries of diabetes?
