With regards to diet protein and fats (good fats) are going to slow down the rate of glucose absorption into the blood and therefore reduce the demand for insulin. Building a 1:1:0.5 carb/protein/fat (this is very rough, some people need more or less of all macro-nutrients) meal is going to be a step in the right directions.
For a Vegetarians look at;
Hemp seeds (high protein and very low carb), chia seeds (similar), protein shakes, lots of green leafy vegetables, nuts (almonds and cashews) all can be added to meals to slow down glucose absorbtion. RE: carbs, try to get low GI carbs when you eat, pumpkin, sweat potato, carrot etc.
