Insulin:Carbs Ratio

I am Type 1 using insulin, I am pretty well balanced, (over 90% in target), and I have been having problems with my insulin to carbs ratio and I wonder if others have this same issue.
Sometimes I need one unit of Fiasp to 10gms of carbs and sometimes only 0.5 units of insulin are required for 10gms.
There doesn’t seem to be a pattern to when these changes occur, it varies day to day.This results in me having to continuously chase my glucose levels. I have considered that different foods are digested at different speeds and this isn’t the reason for this variation.

The one pattern I have found is that on days where I need more insulin in the morning I'll need more insulin throughout the day.

There are a lot of factors that can affect BG and thus insulin needs:
