Interesting info on the benefits of Coconut oil

I bought a large jar of coconut oil at the weekend from one of my local Asian shops. It cost £1.50, very competetive against the £8.50 I saw for a similar size in Morrisons, even if that one was organic.
 
I usually get mine in Holland & Barrett. It costs £10 but you do get a good sized pot for that. Asian shops are a good source but unfortunately they are a bit thin on the ground where I live.......

I am pretty choosy if I buy tinned coconut milk (I don't drink cows milk) as I have realised that some of them are hydrogenated so I avoid them like the plague (Pride brand is one), and anything with additives.

Like so many of these things Coconut products were as cheap as chips but now the benefits have been well publicised they have all jumped on the money-making bandwagon and it now costs an arm and a leg if you want anything decent.
 
I get mine from The Coconut Oil Company, it is expensive though. There are lots of claims made for the benefits of coconut oil, I'm not convinced it's a wonder food, but I think it was key in me being able to maintain a low carb diet in the early days. Firstly it gave me bags of energy and secondly kept me regular as my body adjusted to the new diet. I usually have a tablespoon in my morning coffee, although been doing that less recently, and it's a great energy boosting start to the day!
 
I know it really helped my digestion when it was bad and gave me more energy so it has worked well for me. I am sure that the anti-fungal properties of it have been very beneficial for me too.

Someone posted this on another forum - haven't tried it but it looks jolly tasty and is a good way of taking the coconut oil. Think I would prefer to take it in the morning as I wouldn't need the energy boost before bed!

Coconut oil choc mix

1-2 Tbsp coconut oil
1 tsp carob
1/2 tsp chocolate powder
~ 1/4 tsp maple syrup
a few raisins, sunflower seeds, ground flax, coconut flakes (whatever I'm in the mood for :)

I stir together, & eat a spoonful before bed.
If the coconut oil (which I keep in a low, dark cupboard) is solid, I put it on top of the stove 'hood' light for 5-10 minutes before stirring in the powders. I may refrigerate it for a few minutes, or eat it more 'liquid.'
 
What's carob?

I got a big ol' bucket of Coconut Oil at home that I've hardly touched. I'd love more recipes like this - I love the idea of Coconut Oil Chocolate!!
 
Carob is a product made from the locust bean I believe - it is roasted and ground into a powder. Some people use it as a chocolate 'substitute' although I don't think it tastes anything like chocolate. It is not unpleasant though. I got mine through a herbal shop on Ebay but you should be able to find it in Health shops.

Some health stores sell bars that are made with carob and you may be able to find a relatively low-carb one of those to try (or just cut it up and eke it out over a day or two to spread the carb load). I think it is one of those things you either like or you don't.

You could always replace the carob with a little more chocolate if you don't like it or leave out the choc/carob altogether and just have the fruit and nuts. It's probably a case of experimenting until you come up with a combination that you are happy with. I think I would prefer mine from the fridge so it is nice and firm like a bar, personally.
