I just fancied cake the other day and so I tried an experiment. It was about a 90% success.A xoffee and walnut cake with no flour and Splenda.
It turned out a little dry, so I've had a little bit with quite a lot of cream poured over it. Tastes good.
RECIPE
Usr FRESH eggs they whisk better.
4 eggs separated
4 tablespoons Splenda powder
2tsp instant coffee dissoloved in 2tbsp hot water#cooled
I tsp baking powder
8 ounces roughly ground walnuts [I ground these myself and don't know if you can buy them]
1 silicon loaf pan[ or metal one thoroughly buttered
Whisk the egg whites to firm peaks
Whisk egg yolks with Splenda and baking powder [If you use the same beaters, do whites before yolks to save on washing up. Yolks first then whites wouldn't work properly] add coffee.
Fold chopped walnuts into yolks then fold in whites.
Put into loaf pan and bake at 160 for about an hour. [I think 50 minutes might work well. 1 hour was a little too long] check with skewer.
Allow to cool in pan before turning out
serve slices in bowls with generous pouring of double cream.
