I buy Hecks sausages from Sainsburys or Tesco. 97% meat and just over 1g carbs per sausage. They are quite big so I only need 1 sausage.
Your food choices look very good to me. As a change from sardines, you could try tinned salmon and don't drain it.
Keep it up, you are doing really well. It is just a shame you are anxious about testing - you do have a meter and I urge you to keep trying with it. Eating to what your meter says is the best way to learn how your body reacts.
