Is there a catch for ISA savings accounts?

Hello

I am looking at ISA savings accounts and I see we can deposit £20k per annum and get tax-free interest.

Is there any catch? Can we withdraw the tax-free interest and any deposits at any time without paying tax or anything else?

They all have different clauses which state when interest is paid, how long deposits need to stay in. There isn't a one size fits all ISA from what I understand.
