Kidney beans?

I have made a big pot of ratatouille and thrown in a tin of kidney beans. I will, of course, test test test and try to slow it down with cheesey cauli mash.

They have crazy carbs! Been reading on here about "resistant starch" but I don't understand a word of it

Could someone please explain, in simple terms, what resistant starch means and whether eating kidney beans as part of a LCHF diet is a daft idea?

A carb is a carb, and contrary to what my DAFNE trainer stated, it will raise BG just like any other carb. I use a small tin of kidney beans in homemade chilli. I make 4 or 5 portions of chilli, so maybe a quarter to fifth of a small tin per portion. There's about 24g carb in a small tin of 'no added sugar' kidney beans, so about 6g in my portion of chilli - I'd jab half to one unit rapid-acting for that, so easily doable within my 50g carbs a day routine. Whether it's a good idea or not probably depends how many you're going to eat!

Incidentally, if you're reading the carb content from the side of the tin, you need to deduct the liquid from the overall weight and work the carbs out on the drained contents. You probably know that, but it catches a lot of people out!

Thanks for the links guys. I had a read through (still not sure I understand it, but it all looked positive) then ate my beans last night. Quarter of a tin per portion.

5.8 pre beans
6.7 after 1 hour
6.6 after 2 hours

I am calling that a win!

Fiber is classed as non digestible carbohydrate and this does not raise blood sugar (at least not mine). Resistant starch is similar, I am currently doing a potato starch test and this doesn't raise blood sugar only raises alot of wind.
 
That's always been my problem with lots of foods - maybe guys enjoy the whole "I'm a farting machine" thing, but I always found it very unpleasant feeling like I had a fermentation factory going on in my gut. Another benefit of LCHF is losing the fermentation thing so no way do I want to go back.

It might keep my gut bugs happy, but me - not so much
 
Hehehe. I have been veggie so long that I am now immune to beans. Guts of steel!
 
I eat kidney beans with chilli. Small portion like a finger bowl quantity for protein. I'm vegan. I also eat a slice or two of whole wheat bread eyed seeds. I eat salads the rest of the day with walnuts and blueberries. Blood work is fine.

How are you testing / using the potato starch - I ordered a bag after reading positive things but havnt got a clue what to do with it!
 
I find that all carbs elevate my blood glucose levels - as in the UK we don't count fibre as carbohydrate - but those from legumes seem to have more impact, keeping my levels high for longer, though they might not go super high in the same ratio. It is always worth testing.
