I have made a big pot of ratatouille and thrown in a tin of kidney beans. I will, of course, test test test and try to slow it down with cheesey cauli mash.
They have crazy carbs! Been reading on here about "resistant starch" but I don't understand a word of it
Could someone please explain, in simple terms, what resistant starch means and whether eating kidney beans as part of a LCHF diet is a daft idea?

A carb is a carb, and contrary to what my DAFNE trainer stated, it will raise BG just like any other carb
Hehehe. I have been veggie so long that I am now immune to beans. Guts of steel!That's always been my problem with lots of foods - maybe guys enjoy the whole "I'm a farting machine" thing, but I always found it very unpleasant feeling like I had a fermentation factory going on in my gut. Another benefit of LCHF is losing the fermentation thing so no way do I want to go back.
It might keep my gut bugs happy, but me - not so much
How are you testing / using the potato starch - I ordered a bag after reading positive things but havnt got a clue what to do with it!@ Smidge
Fiber is classed as non digestible carbohydrate and this does not raise blood sugar (at least not mine). Resistant starch is similar, I am currently doing a potato starch test and this doesn't raise blood sugar only raises alot of wind.
