Stir-fry! Cauliflower, sprouts, mushrooms, lardons, half a pepper (more would be fine but that's what there was) kale, bean sprouts, slice of lemon thinly chopped, small piece of bacon finely cut, butter, olive oil, cider vinegar. Took minutes, cost pennies.

We go posh and call it fritatta. !AnythIng and everything goes in an omelette my house

I'm going to fry my Christmas sprouts with lardons this year. There's a first time for everything.Lardons are basically small cubes of fatty bacon, so if you’ve no lardons (they can be expensive for what they are) just chop more bacon, best to use streaky
I do eat my omelette with my little finger cocked does that count lolWe go posh and call it fritatta. !
No-one has mentioned soup.....
All my left overs end up as soup and will often do me a couple more meals too.
I loathe cooking but even i can shove left over veg and salad in a pan add some water and blitz.
I love the idea of this but at three months in I am still paranoid about getting an accurate carb count and think I would get confused with all the bits and pieces.I agree - I have in the past made the odd reference to "lumpy soup" which is my usual lunch. Another quick, easy, thrifty and tasty way of using up odd fridge bits.
