Hello everyone. I'm new to the forum and straight onto the soapbox! I have been reading all the advice on this forum about low carbing since being diagnosed type 2 last year and have managed to lower my glucose levels and lose weight without medication.
What has prompted me to post is seeing a recipe that diabetes uk have posted on Facebook for banana muffins. I just don't understand why they would recommend diabetics to eat muffins. Does any one else have any views on this?

No seriously, its actually to check what is in them, before commenting on good or bad.
 
Here is the recipe, makes 12 muffins, 14.8 carbs per muffin. They look quite small in the picture, certainly wouldn't fill me up.
  • 200g of bananas, ripened and mashed
  • 100g of self raising flour
  • 100g of almond flour
  • 2 eggs
  • 60 ml of water
  • 2 tsp. of sweetener
  • 100ml of unsweetened apple juice
  • 1 tsp. vanilla extract
  • 1 tsp. cinnamon
  • 2 tsp. baking powder

they have attempted in this recipe to lower carbs somewhat by using half almond flour instead of wheat flour and apple juice and artificial sweetener instead of sugar so their recipe isn't the worst thing in the world I have ever seen - but bananas tend to be high carb..
the other message they are attempting to deliver is that a treat like that is ok and a lot better than eating a massive muffin from a starbucks or a costa coffee.

another thing to consider is that some diabetics don't follow a low carb diet ( that is another discussion though :) )
 
I don't think anyone is advocating the eating of muffins every day. But not everyone follows a low carb diet (and different things work for different people) and everyone needs treats of some kind (not necessarily food, but can be) occasionally and this recipe is providing a reasonably nutritious version of one of those.

Yep, they appear to be the mini-size of muffins. Standard baking-tin for muffins is this size: range from 1.75 to 2 inches (44 to 51 mm) in diameter at the base and are 1.25 to 1.5 in (32 to 38 mm) tall. Personally as a non-low carber I would not have any problem eating a proper sized muffin of that type, though with the banana/apple juice combo and white flour it needs some bolus insulin as antidote. I would probably replace some of the apple and banana stuff with other low-carb berries and nuts.
 
I eat cake from time to time. I deal with it appropriately and it doesn't hurt my blood glucose or my hba1c. Diabetic or not, I wouldn't do it every day, but I also choose not to restrict things just because I have diabetes.
 
Type 1s can (and do) eat cake, however this replaces half flour and sweetner so is a better than average muffin.
 
I would eat it... I don't see why having diabetes means that I have to restrict myself from eating a muffin every once in a while. Besides, that recipe doesn't look so bad. But then again, what do I know?

I doubt a low carb diet would work for me anyway. It might just be the honeymoon phase, but if that's the case, then I'm going to enjoy it while it lasts. I would have probably thrown in some nuts, and skipped the apple juice (don't really see the need for that...) I love me some banana nut muffins... :)
