This is delicious and cheap
Ingredients 1pound lambs' liver
1 pound nice onions
little oil
salt and pepper
Method
wash then part freeze the liver( it's easier to slice that way)
slice liver removing any large tubes
Cut into approx 1 inch squares 1/2 inch thick
Slice onions into 1/2 inch rings
Heat oil brown onions a few at a time. hey are nicer if they colour a bit.
Seet aside in casserole dish
brown the liver, a few pieeces at atime. Add more oil iof you need to.
put browned liver with onions.
Cover with hot water
put lid on casserole and cook for at least 2 hours in a slow oven. then taste and adjust seasoning
the liver will cook to a "crumbly" texture and the onions reduce to a thick sauce.
the flavour is distinctive, so serve with a mild flavour veggie. eg pointy cabbage.
