this is my variation on cooked cheeseake [remembering my Czech roots]
Base
toasted crushed nuts with butter
Filling 3 large eggs, 150ml double cream 100g curd cheese, 100g grated cheshire cheese, 100g sultanas soaked in 100ml Limoncello [homemade], few drops lemon essence2 tablespoons candarel Stevia sweetener or equivalent. 1 teaspoon honey [this is just for flavour!]. beat eggs and cream thoroughly, ad all other filling ingredients and mix thoroughly.
Assemble in silicone baking pan 8 inch or 20cm. Bake at 180deg C for 40 mins
