low carb christmas dinner (and other meals at this time)

OK so looking ahead to next week and trying to decarb the main bits of the meal. obvioulsy i will be forgoing the roast potatoes, (i may allow myself a roast parsnip) but how is everyone low carbing their menus.

Oh and how do you cope with get togethers at others houses when you cant control the menu. When we all get together its usually a buffet style and everyone brings something. I obviously would take appropriate stuff for me to eat but I can just see it all getting eaten and me left with some crackers and cheese.

So xmas dinner for us will be a prawn cocktail thing to start with, a bird (turkey or duck) and either roast lamb or pork, veggies, both steamed and roasted, so far so good. roast pots for everyone else, mash for everyone else, (might mash some cauli for me)
sausages in bacon, stuffing (need to find a low carb stuffing recipe, prob one using sausagemeat).

Dessert, we are not pudding or cake people so that makes it easier. Thinking about a trifle, made with sugar free jelly and berries, custard made with either full fat milk or thin cream,whipped cream on top, poss with some dark choc shavings for decoration.

or I usually make a white chocolate torte with a biscuit base, hae been playing around with a similar thing using coconut butter, double cream, and thinking of putting it on a crushed nut base instead of biscuits. its got a different texture to the chocolate torte due to the coconut but the small amount i tried sets well, just needs a bit of vanilla and maybe some splenda but the taste is awesome. Or maybe a cheesecake, they should be pretty easy to make low carb on a nut base.

For taking to others houses I am thinking a cream cheesy dip (maybe with spinach) with some salami chips, cut up veggies (cucumbers/peppers etc), and one of the above desserts. baking some little sausages, cubes of cheese etc.

Just wondering what others are having/doing, and any other menu suggestions gratefully recieved.
 
I was planning to forego the potatoes of any kind, no sauces apart from gravy, no parsnips but lots of other veggies. To be honest though, I think Christmas Day is only 1 day a year & I MAY eat more than I would otherwise do! Don't really like Xmas pud & it's horrendously high in carbs. With all the alcohol as well, I'm pretty sure by BG won't be anywhere near perfect!
For visits I just try to pick the low ish carb options & if there aren't any, either say I don't like it or grit my teeth & try to get the insulin bolus right - not much help if you're not on insulin I'm afraid.
