Decided to do Christmas low carb this year big time (well except for the main Christmas dinner :) ). Consequently we've been hunting around for the best prices on a whole load of neat low carb ingredients. Thought I'd share our findings. Note we buy stuff in seed form then use a coffee grinder , food processor or liquidizer to turn it into powder / flour etc

First some great bargains if you have the space.

Coconut flour £49.99 for 20Kg or £2.50 / kilo. http://www.centralfrozenfoods.co.uk Store it in your freezer

This one is great :lol:

Wheat Gluten £38.99 for 20Kg or £1.95 / kilo. http://www.nsabaits.com/flours-and-ground-particles/196-wheat-gluten.html - Note it does says "Human food grade". Again store it in your freezer or it lasts for years in a sealed container just kept in a cool place.

Thanks for that xyzzy, I have been trying to get East End coconut powder from my local Asian shop but they have been out for months so I will get some from centralfrozenfoods.co.uk. Does it still remain powdery when stored in the freezer? and what recipes do you use it for?, thanks, Deb
 
I'm also low carbing this christmas. One thing Ive been trying to find to replace the lovely bits I can buy in Lidl and Aldi is Gingerbread, the cakey type. Does anyone have a good Gingerbread recipe? Also if anyone has a Gingerbread man recipe I'd love to try that too.

i've been trying to find a way of making a suitable Christmass pudding. By substituting different dried fruits and using different flour and leaving out sugar, I can reduce the carbs a little. then it will be down to portion control.

This is from a German LCHF forum, a recipe by Dr Jutta Schuetz who is a diabetic herself.


120 butter, melted
3 eggs
200 g ground almonds
4 tbsp protein powder, possibly need a bit more than that
2 tbsp cocoa powder
few drops vanilla extract or pinch of dried vanilla powder
1 tsp sodium bicarb
3 tsp spices - you need ground ginger, cloves, cinnamon, nutmeg, cardamom and star anise (but thats the German thing I think; I made these last year just with ground ginger, all spice and bit of cinnamon and they were lovely and spicy) so just play around with spices to suit your taste
4 tbsp liquid sweetener (I dissolved Splenda tabs in a little bit of water)

Mix eggs until foamy, add melted butter, then the rest of the ingredients, you want to have a firm dough.
Cover with clingfilm and place in fridge for 2 hours.

Now shape into cookies, bake at 175 degrees for 20-25 minutes.

We made them into little treeshapes and stars, decorated with low carb marzipan and gold/silver dust, they were lovely.
