Hi, ok tonight I tried fergus's chicken curry recipe( thanks fergus)

I missed out the line and didn't add either the stock or creme fresh lol

Nevertheless it was scrummy I used tandoori paste oh and couldn't resist adding some coconut stuff, will try it again soon with ALL the ingredients, but highly recommend it as it was, I reckon you could serve the chicken in a bowl as a side dish the way I did it

The fake cauliflower rice was ok, but just ok next time ill flavour it with something, dunno what though :)

Here's a quick low-carb version of that traditional British classic dish - curry with fake rice.

First chop and fry an onion, leek and 2 cloves of garlic in a little vegetable oil until soft. Now add a dessert spoon of curry paste (I find Sharwoods 'Madras' works very well, but whichever one you fancy will work too.)
If you use chicken or turkey, chop into bite size pieces and add to the vegetables. Continue cooking until all sides are coloured. Now add 250ml stock, chicken, vegetable, whatever, and 100ml of creme fraiche. Leave to simmer while you fake the rice!
Add a tablespoon of vegetable oil to a large frying pan. Warm it up and grate the head of a cauliflower with a cheesegrater into the pan fry for 5-10 minutes utill it takes on a little colour. Add a little salt and pepper, some spices such as cinnamon or garam masala if you like them. Add a little stock if it looks too dry,
To serve, spoon the 'rice' into a bowl and add the curry and sauce on top.

This works well with all sorts of protein - chicken, turkey, pork, quorn etc. Also, fish or prawns work well, although you would want to add it to the sauce much later, perhaps 10 minutes before serving.

I make a similar one, but add a tin of tomatoes instead of creme fraiche, and I add oodles of vegetables to it. Carrots, mushrooms, swede, cauliflower, you name it, in it goes, and it's very tasty. I do have a small spoonful of brown rice which seems to work OK with me.
I don't fancy the cauliflower rice myself, I prefer the cauliflower in the curry, but one day I may give it a try. :D

You could make a low carb flatbread and low carb onion bhajees with your curry and make cauliflower pilau rice

Melt a decent amount of butter or ghee in a pan, add half a finely chopped onion, 3 cardamom pods, slightly bruised, 3 whole cloves, piece of cassia bark, a bay leaf and fry on low heat until the onion begins to take on a little bit of colour, dont brown it, just slightly golden.
Turn off the heat, cover and leave to infuse.

Grate cauliflower into rice, put into microwavable dish, dont add water, but just cook on high for 5 - 6 minutes. Add to the pan with the onion/spice mix and stir through.

I fed this to one of my husbands friends, a self confessed cauliflower hater, he didnt notice, the lights were dimmed slighly at the time, afterwards we told him he ate cauliflower with his curry!! He said 'well I knew it wasnt Basmati rice, but I honestly thought it was some sort of rice'.

Hmmmm, if I can find the ingredients ill give that a try thanks :)
