I'm a big fan of salad in general so eat a lot of what I'd call substantial salads. Even before my prediabetes diagnosis I preferred meatballs (vegetarian ones for me) on salad. I also use vegetarian chicken to make a Mexican style salad with a dressing made of sour cream/mayo/fresh lime/chipotle chillies & mashed avocado. The Mexican dressing is also nice in a BLT omelette. Haloumi & hummus salad is gorgeous. Of course now the weather is getting cold I guess I'll have to branch out a bit!
