Low Carb Dinner Ideas !

Dieting, feeling tired, housework,
Im currently doing the LCHF diet and i must say im losing weight and finding the diet very good.
But the only thing is i am running out of ideas of what to do with meal times esp dinner meals.

I would appreciate if any of you guys could post some ideas or recipes of what i can make.

Ooh so many possibilities. Make the cauliflower your new best friend. Try cauliflower rice - grate cauliflower and fry in coconut oil with whatever else you like eg garlic or mustard seeds and lemon juice. Cauliflower is also good as cauliflower cheese, mashed or roasted. I also make cottage pie with sweet potato mash or use sweet potato to make chips - don't have too much of it though. I'm a big fan of salad in general so eat a lot of what I'd call substantial salads. Even before my prediabetes diagnosis I preferred meatballs (vegetarian ones for me) on salad. I also use vegetarian chicken to make a Mexican style salad with a dressing made of sour cream/mayo/fresh lime/chipotle chillies & mashed avocado. The Mexican dressing is also nice in a BLT omelette. Haloumi & hummus salad is gorgeous. Of course now the weather is getting cold I guess I'll have to branch out a bit!
 
Salmon and salad. Especially with rocket and loads of home made dressings which are so easy to make.
 
I generally eat the same meals as before just leave out the carbs and have extra veg.
