questiin - can you swap almond flour for linseed flour for cakes etc?
I'm not a baker in any way but looking at recipies on low carb programme there were several that looked really good, esp cream cheese brownies. but it uses almond flour, I've always had a sensitivity to nuts (not allergy)

Hi, I've not tried swapping almond flour for linseed before. What I usually do (as almond flour really expensive!) is use sunflower seed flour instead of almond flour. I grind sunflower seeds into flour in a small electric coffee grinder and use it like for like in almond flour recipes.

Linseed/flaxseed is highly absorbent, and will suck moisture out of any baking mix.
So you may find that it works, once you get the liquid quantities right. Probably take a few test mixes!
Beyond that, I'm afraid I can't make any suggestions.

Are you OK with coconut flour? People who have problems with tree nuts can often get away with coconut, I understand. But having said that, I find coconut flour a very, um, all pervasive presence in cooking, and try to use it sparingingly.
