It is confusing at first, but you will soon get the hang of it. Do read all the nutrition labels on the food you buy. Look for "total carbohydrate". If it is above 10g per 100g it is high. If you are going to eat the whole tin/packet at one meal, over 5g per 100g is about as high as I would personally go. You can ignore the "of which sugars" because sugar is just one carb and the amount is included in the total.
There is an excellent book available from Amazon (also an app) called Carbs & Cals. This is essentially a picture book containing thousands of different foods, pictured in normal serving sizes on a plate, with the weight. It details the amounts of carbs, calories, fat, protein and fibre in that portion.
