I am a T2, who low carbs to gain non-diabetic A1cs and lower any future diabetic complications also had my gall bladder out 12 months ago. I was not given any special dietary advice save for "try and see". Many ex-gall bladder owners told me tales of woe about foods they could no longer eat, including my mother.
As low carbing with increased fat consumption had resulted in 18 kgs of weight loss in 12 months and great A1cs 5.0-5.3, I did not want to have to restrict myself from any of the tasty, satisfying foods I now ate. For me, nothing was a problem and my cholesterol figures continue to improve without meds.
So typically I have the bacon and eggs, almond meal muffins, crunchy nut and seed granola, a coconut milk, berry and whey powder smoothie and often 1/2 a grapefuit (I don't take statins) or some stewed rhubarb with choko "fruit' (also called chayote as well but not a UK available vegetable from memory).
