low carb high sugar?

hi am diagnosed two months and on insulin 2 times a day.

In the main sugar great in morning and evening, but peaks mid day/evening meal, some days no peaks etc but in main does go up. Tried the low carb thing and does seem to work - If I have none at all!!! I have never been a big eater, only weigh 51kg so not looking to lose weight just keep sugars under control- but am gobsmacked how half a slice of brown bread for breakfast can go from a morning reading of 5 to one of 12 at lunchtime 6 hours later? Is this normal????
 
Hi Imogen and Welcome.

Be prepared for many surprises along the road to figuring out the what is healthy for you to eat... it may be that you find (as I did) many old ideas get shaken up.

Here's a couple to start with: many commercial brands of brown bread can have an higher carb load than plain white. I find it best to read both the nutritional labels and the list of ingredients; as the quality of the food can also make a difference.

You may also find that your tolerance for different foods -- especially carbohydrates -- may change through the day. For me breakfast is when I am least able to tolerate carbs... you may find that same bread (for example) has less BG effect later in the day.

Use your BG meter to test before and around 2 hours after each meal to see how it effects you. Keep a food diary and start to watch for repeatable patterns rather than reading too much into a single BG.
 
The morning thing is interesting, but I do all the rest is slow release carb bread soya and linseed bread not cheap rubbish! I had a cake for someone birthday the other day and my sugars went down? I don't and never have had an unhealthy diet I just think there must be other factors, I keep a food diary and have for at least a month and there is no consistency in readings. I never really ate carbs before I was diagnosed and wonder if that is why they impact so much now??
 
I suppose what Im asking is do certain people just have to eat virtually nothing to keep BG under control? I don't think 2 slices of bread, a lentil soup and a green salad (example of a days diet) should cause such erratic sugars?
 
I don't starve myself Imogen but I tend to focus more on Fats and Proteins rather than Carbohydrates... or put another way I mostly eat home cooked, locally sourced real whole food (avoiding processed and packaged foods) while at the same time avoiding those starchy foods which tend to raise my BGs (bread, potatoes rice etc...). Protein can raise BG in the longer run; as it can be converted to Glucose but I find this helps to keep my BGs stable... rather than having rapid spikes and troughs
