low carb ice cream

After months of low-low carbs I am missing bread, pasta, rice, cakes, biscuits and ICE CREAM. We have just bought a 'proper' ice cream maker and the recipe for vanilla is cream, milk, flavouring and SUGAR - but we have substituted Stevia for the sugar so I reckon I have come up with a way of getting my ice cream fix again. OK - it isn't cheap but I reckon it is worth it to bring a smile back.

We have also bought a Kenwood grain mill and I am wondering what I can grind up so that pancakes can be put back on the menu?
 
You could also have a look round for "oppo" ice cream. Its sold in some branches of waitrose and co-op, budgens and holland and barrett, The vanilla has about 7.6g of carbs per 100g so it's relatively carb light. Doesn't spike me too much.

More recently, I fell upon (can't recall how exactly) a site called yummly.com. It's absolutely nt a low carb or diabetes focused site, but it does allow the user to state both ingredients to be IN a recipe, but also those to be excluded. It also has a small selection of diet types, which does include Low Carb. I've found load of stuff on there, with my avoid elements including sugar, flour, potato, pasta, rice and so on.

You do need to keep your wits about you on yummly as some things tend to crop up unexpectedly, like banana as a sugar substitute. Ahem. I'm not a sweet fan, so I'm almost always looking for savoury ideas.
