Thanks for starting this thread!!! I’ve been vegan (with the odd dairy lapse) for many years, and now, since retinopathy eye bleeds 1-2 years’ ago, have been trying my hardest to be low carb/keto with some success and still learning and experimenting. It’s challenging and takes a lot of thinking, planning, prep, and carting food around with me constantly. I also have/had a 40+ year history of eating disorders so anything around food is difficult and triggering for me. I’ve felt very isolated in my vegan/keto quest!!
