Low Carb Menu for Type 1

Hi Everyone

I have been a Type 1 diabetic for nearly 40 years,I am now 46 years old. I found out about 2 years ago that I also have coeliac disease. Since the diagnosis of that I have continually struggled with my weight and have gone from around 8 stone (pre coeliac) to 11 stone (after diagnosed with coeliac)and am now down to 9 1/2 stone, at just 5ft 1inch this is NOT good and I have been advised by my diabetic specialist that I need to lose weight! I have read with a lot of interest all the threads re the low carb diet and am interested in trying this in the hope that I can get back to a more normal and healthy weight and improve my BS readings, can anyone recommend any books or menu ideas as I'm not sure where to start and are there any better types of fat that you should eat ie better for you than others, I only have olive oil at the moment with very occasional butter.

I have recently changed from Lantus to Levemir and have this twice a day with actrapid 3 times(before meals)after some initial high blood sugars whilst trying to get the Levemir dose right I am now getting readings between 4.8-6.8.

Any advice would be appreciated. Thanks.

I'd thoroughly recommend Prof. Charles Clark's 'The Diabetes Revolution' as an excellent place to start. It's very concise but covers many of the important issues very well. His wife has written the menu section of the book and it's full of suitable foods and recipe ideas to get you started.
There are many other books too of course, but give this one a go first and see how you get on.

Hi Suzie. I am a type 2 extremely gluten intolerant and my Mum was (as I now know) a type 1 Coeliac. In all her 64 years it wasn't picked up until 4 weeks before she died which was way too late.

It is good that it has been diagnosed for you. The problem with Coeliac/gluten intolerance is that people who find they can't eat gluten carbs any more tend to eat gluten-free ones instead. Unfortunately they typically are much more carb-dense than gluten carbs, so weight gain can be a problem.

I was fortunate in a way because my digestion finally collapsed about 18 months ago, which is when I discovered the gluten intolerance, and I could eat very little. Carbs have always been problematic for me but even more so after the collapse so I had to dump those too. It was by following the Specific Carbohydrate Diet (SCD) which is fairly low carb that I have been able to rebuild my digestion. It is still a work in progress but I am much better than I was.

I have learned an awful lot about Coeliac/GI over the last 18 months and Diabetes, particularly type 1 is very much linked, as are a lot of other diseases and health issues.

And totally agree with you AliB re the non gluten food, I had a bit of a food fest on this when I first found out I had coeliac until I realised how much sugar and fat was in them, too late by then!!!!All the best and good luck with the food regime.
