Low carb packed lunches

Hi everyone!

In 2013 I went freelance, and in 2014 I started a low carbohydrate diet. That means I’ve never had a job with normal hours since adopting this way of eating.

However, in September I’ll be abandoning being self employed and heading back into a more ‘normal’ job. So I’m wondering, for those of you who work an office job, what do you do for lunch? I find Heylo’s low carbohydrate bread genuinely doesn’t spike my levels, so that’ll probably be the bedrock of lunch, but I’m open to ideas!

(For reference I’m type 1 and in my late 30s, diagnosed 1990 aged 3.)
 
What do you eat at home for lunch? Almost anything can be put in a packed lunch, cheeses, salad, hard boiled eggs, meat, tinned fish like tuna, cold omelet as a wrap rolled with slices ham or cheese slices, you can roll lettuce with fillings also. Low carb bread like you say, if you have access to a microwave, leftovers. I’ve got a wide mouth flask from Amazon that you can put low carb soups, stews, curries in etc.
 
Great points, thanks! I tend to cook my lunch at home (French toast with aforementioned low carbohydrate bread/omelette etc.). Maybe I’ll try it cold or just go with salads etc. I’ve got a few months of overthinking everything before I start, so I’ve got plenty of time to decide!
