Low Carb Stuffing

This was accidental, but if you want a low carb stuffing it works very well.

I was trying a new recipe from @ewelina site http://www.diabeticgoodbaking.com/ the cheese biscuits, my young son was 'helping', the aim was to add a FEW herbs to half the batch, he added a LOT of herbs to half the batch, including a fair bit of sage.

He also wanted them baked in pirate cup cases which were small, like the old fairy cake size. Once baked they really tasted like stuffing! My family actually ate them with their Chicken yesterday.

Ingredients:
  • 150g/5 ounces ground almond
  • 100g/3.5 ounces cream cheese
  • 50g/2ounces cheddar cheese, grated
  • 50g/2ounces butter, melted
  • 1 egg
  • 1 heaped tsp baking powder
  • ½ tsp baking soda
Preparation:
  • Preheat oven to 180C/350F.
  • Mix all dry ingredients (almonds, baking soda, salt) in a large bowl.
  • Add butter, cream cheese and the egg. Combine everything together and add cheddar cheese.
  • Portion batter. It’s really up to you what tray you want to use. It can be muffin tray or a mini loaves tin. Bake for 20 -25 minutes. Taste nice both warm and cold.

Pirate cupcake cases are optional ;)
