I’ve been experimenting recently and thought I’d share some photos of my attempts!
peanut butter and choc bites, honey and oat cookies and chocolate chia pudding. These have worked really well for my blood sugars
For the chia pudding, it’s depends on your consistency preference but I tend to use 100-120ml of coconut/unsweetened almond milk, 3-4 tbsps of chia seeds, dash of vanilla and cinnamon, tbsp of cocoa powder if going for the chocolate version.
Tabouleh with chia seeds in place of burgul or rice ( finely chopped parsley one bunch, 3 medium tomatoes chopped small and seed strained out with excess fluid, mix in chia seeds ? 1/2 cup, mix. Just before serving mix in dessertspoon of olive or other oil. ( the oil stopps the parsley sticking in one's throat.)
