Honey Oat Cookies

Ingredients
To make Honey Oat Cookies, you'll need:
- 60g porridge oats
- 25g medium oatmeal
- 60g Stevia
- 1 tbsp. runny honey
- 1 tsp. vanilla extract
- 60ml vegetable oil
- 1 medium egg, lightly beaten
- 1 tbsp. pumpkin seeds
Method
- Preheat oven on Gas Mark 4 or 180°C.
- Line an 8 x 8 inch baking tray with baking parchment.
- Pop the porridge oats, oatmeal, Stevia, honey, vanilla extract, oil, egg and pumpkin seeds in a large mixing bowl and stir thoroughly.
- Spread the mixture onto the baking tray and smoothen using a spatula.
- Place the cookies in the preheated oven for 10 minutes, until they have turned a golden brown in colour.
- Once cooked, transfer them onto a wire cooling rack.
- Your honey cookies are now ready to eat.
