To make Honey Oat Cookies, you'll need:
  • 60g porridge oats
  • 25g medium oatmeal
  • 60g Stevia
  • 1 tbsp. runny honey
  • 1 tsp. vanilla extract
  • 60ml vegetable oil
  • 1 medium egg, lightly beaten
  • 1 tbsp. pumpkin seeds

Method

  • Preheat oven on Gas Mark 4 or 180°C.
  • Line an 8 x 8 inch baking tray with baking parchment.
  • Pop the porridge oats, oatmeal, Stevia, honey, vanilla extract, oil, egg and pumpkin seeds in a large mixing bowl and stir thoroughly.
  • Spread the mixture onto the baking tray and smoothen using a spatula.
  • Place the cookies in the preheated oven for 10 minutes, until they have turned a golden brown in colour.
  • Once cooked, transfer them onto a wire cooling rack.
  • Your honey cookies are now ready to eat.
