Low Fat Sauce - No Tomatoes ...

Hi

I'm the one with the Diabetes, but my wife has a problem with Tomatoes.

To help spice up our pasta, can anyone suggest a pre-packed or own made recipie for a low fat sauce that doesn't include tomatoes.

I'm bad with pasta, but you're going to have to go medium fat, maybe low fat cheese, pine nuts, chili is good, it's difficult to coat the pasta with any liquid, other than tomato or fat.
Low fat chicken stock/soup, but it's usually a cream, even with low fat skimmed milk.
Mushroom boiled down in skimmed milk.
Add herbs to taste.
Ham, skimmed milk, herbs, pasta.
 
No, sorry, no low fat pasta sauces, why on earth low fat?

If tomatoes are out of the question I would go for pasta Alfredo but that is not low-fat.
 
Hi Pete, one of my favorites for pasta is spaghetti aglio, olio e peperoncino. Just heat a good glug of olive oil in a pan and throw in 2 or 3 chopped up cloves of garlic chop up a couple of red chillis and warm well through. Meanwhile cook your spaghetti, drain it, add to the pan where the oil is, mix n serve. If u like u can add a finely chopped anchovie to the pan with the garlic, it doesn't taste fishy just gives it even better flavour. I sometimes add some chopped hazelnuts over the top instead of parmesan and it gives it a nice crunch. Buon apetito:)

Hi Pete. I have several favourites. I always have a bottle of garlic oil on the go (A bottle of extra virgin olive oil with 3 or 4 crushed garlic gloves in it, leave to steep for 2-3 weeks and then its ready to use). Once the pasta is cooked, drain and put back in the pan, pour over some of the garlic oil and then add chopped black olives. Stir in and serve with a small grating of parmesan ...... mmmm ... delish! I also use low fat cream cheese, thin down with a little water in a pan and then add pre-cooked prawns. Toss in the cooked pasta, sprinkle with chopped basil leaves and a little parmesan then serve.
I also keep a bottle of chilli oil on the go which is the same as the garlic oil but swop garlic cloves for chilli flakes. Both of these can be served with pasta on their own.
