My mum's been well controlled Type 1 diabetic on insulin for years with some renal impairment. However she's just been told her potassium levels are now too high and she has to reduce her intake. we're now extremely confused because all the food she's used to eating to keep her diabetes stable seems to be high potassium, like slow release carbs, wholemeal grains and pulses, root veg, most green veg and lots of fruit, not to mention meat, fish and dairy.
How do we navigate through this nightmare food scenario and keep her diabetes stable without jeopardising her kidneys?
Also can anyone recommend a reliable dietary website? Lots of the ones I've visited seem to offer conflicting advice about what's high and low potassium. And how do I make informed food purchases - there doesn't seem to be ANY labelling of potassium content in food?
