Low to high reading

I came in from work yesterday 6pm and had blood readings (via prick test) of 3.7.
Two hours after eating lentils and wholemeal rice (rice from a microwave pack) my sugar levels were 7.3. highest they have been since I started testing two weeks ago I'm confused as to why.
I'm newly pre diabetes and drastically changing my diet and surprised at the level of carbs in food
 
Both those numbers aren’t too bad, the 3.7 is slightly low but as you are diet only then that shouldn’t be a problem unless you begin to feel a bit wobbly etc. I often have numbers in the mid to high 3s before my meal. Also meters aren’t totally accurate so you could have been a tad higher. The 7.3 2 hrs after a meal is ok too, anything under 7.8 is considered fine but some like me prefer to be lower

But…

The important number you need to look at with those readings is the rise, they say a rise of no more than 2 is best, you had a rise of 3.5 so a bit over the 2. This information tells you that your body didn’t cope that well with the carbs you had, both lentils and rice are very high in carbs, maybe try reducing your portion of size or replace one of them with a lower carb protein.

Are you vegetarian? If not try replacing the lentils with any meat, chicken or fish and maybe reduce the size of your portion of rice and add some low carb veggies instead such as courgettes, green beans - anything grown above the ground, apart from sweetcorn is lower in carbs.

Hi, it's all very confusing for sure..

When you say you are "drastically changing your diet" - can I ask in what way?
Most of the advice I received on diet early on really wasn't that good, and I look back at the first 8 months or so post diagnosis (and several years before) and while I thought I was eating well, my views on what we grew up believing have been massively shaken by trying to figure out what was going wrong...

Understand that my view now of lentils and rice is that it's really all sugar.. so it isn't that much of a surprise the numbers you are sharing, though as @lovinglife says, they also aren't really anything to worry about, a fasting BG level of 3.7 is really pretty low..

Thank you for replies.
I've stopped eating bread,pots,rice pasta grains and some fruits. I stopped eating sweets chocolates etc months ago as it was becoming too much of habit.
Read the nutritional thingy and now eat
Veg with chicken or fish, eggs, blueberries, strawberries whole nuts natural yogurt, tuna cheese
I'm hoping this is going to lower my levels
I don't eat lentils and rice now lol
