As the weather (supposedly!) is getting warmer, I'm thinking of investing in an ice cream maker. However I want to make sure first that I will be able to make low carb ice cream without using lots of artificial sweeteners. Has anyone got any good recipes or do you know whether it is possible to simply blend berries with cream / tinned coconut milk and put into an ice cream maker? Am quite happy to experiment but would like to know that there are a few recipes that work before spending money!
I've just made a custard (5 egg yolks + 280ml double cream + 50g Xylitol + 1tsp Vanilla essence) into extremely thick ice cream. It's so concentrate I can't eat it like regular ice cream, but I add 30ml to 100ml of Greek Yoghurt in the morning and it's just heaven. Also it adds loads more fat to the dish without being too rich.
Next time I'll try a lot less Xylitol and some (50ml) water.
I tried 150 ml single cream with 200g frozen strawberries and two tablespoons of truvia in a nutribullet. It needed a few minutes in the freezer to get to the right consistency but was ace.Andrew has suggested coffee and whiskey.So I will try this next thinking cream,whisky,espresso,truvia and 80% chocolate.
