making sense of blood sugar readings

Hello,
I'm relatively new to testing my sugars so I was wondering if I could get some feedback from more knowledgeable people than myself - I had HbA1c tests pretty frequently since October, the first four were all 47 or 48; one at the start of last month was 50 and my latest two weeks ago - after finding a lot of useful information on here - 45!

I know this is still too high though, and I feel like the results I get from testing pre-meals aren't as low as many people on here, so I wonder if I'm doing something wrong. My fasting result is usually somewhere in the 5's - yesterday pre-breakfast I was 6.0 and two hours later 6.3, and just before lunch I was 5.7 even after having had a snack in between. My dinner reading was pre-meal 5.8, and 6.9 afterwards; whereas this evening I was 6.6 prior to even eating - I guess I feel like I'm not seeing much/enough consistency day by day, despite eating similar meals?

I know that my post-meal readings aren't showing any major spikes, but my general "baseline" seems to be higher than it should, and I don't really know what to do about that? I feel like I've cut a lot of carbs out; I've gained 2kg in about a month so I'm no longer officially underweight, and with my HbA1c going down I'm clearly doing some things right, but I don't feel like it's enough (especially symptoms-wise, I'm quite thirsty very often and drinking makes no difference; eating often makes no difference to feelings of hunger, all of that stuff).

Is it just a matter of time for my body to get used to things?

Hi, your numbers look perfectly reasonable and your HbA1cs are mainly in the prediabetic range. What do you typically eat through the day?

Breakfast is pretty much always almond flour porridge (mixed with 5g of regular oats), topped with flax, chia, cinnamon and protein powder.
My last few dinners have been something like a coconut and lentil curry, or veggies and beans with soy mince, that sort of thing.
Lunch is my biggest issue right now, with finding something filling that I like - sometimes I make a sandwich (one piece of Burgen bread) with spinach, cucumber, fake meat, avocado, seeds, those sorta foods but I was trying to cut out the bread, so sometimes I've been doing boiled veg topped with nuts, avocado, and a fatty salad dressing but I still get hungry reasonably quickly afterwards.
I snack on nuts, hummus, peanut butter smoothies - healthy (hopefully?) fatty things. I have this prescription drink that's full of fat which I think is the main reason I'm gaining weight, without it I'll probably just start losing it again.

I was expecting my numbers to always be around the 5's throughout the day, maybe in the 6's after eating but I'm not really seeing that :(

The oats, lentils and beans might be affecting your BGs (they would mine). I've never tried Burgen bread,

I'm vegan, yeah. I've been doing it for nearly three years and was hoping to be able to keep it up. I haven't tried eggs before so I don't know how I'd get on with them; I think I'll see how my next HbA1c goes and decide from there.

I'll cut the oats and see what happens. I've only just re-introduced beans since being diagnosed, so I'll keep a close eye on them, but the lentils seem to be okay - readings from my last lentil-heavy(ish) dinner are 7.1 before eating (tested a "new" snack two hours prior, definitely not eating it again), 1 hour later 6.9, 2 hours later 6.8 and two hours later again 6.0 so I assumed it was all okay? That's the most testing I've done on one meal because I was a bit worried that they wouldn't be dealt with properly, but maybe the high reading pre-dinner meant I didn't get a true reading after.

The bread isn't great, but equally not terrible. I get about a 1.0 spike 2 hours after eating (which I get with some other meals too), but that's still higher than I'd like.
