I have been advised to cut back on my carbs..I.e. potato,rice & pasta. My question is..what to cook with a meal instead? They are the staples in my house ‍

When I first started eating low carb "sides" were my biggest concern. These days it all depends whether I'm eating by myself or with the gang. To be honest if its just me I don't bother. I no longer feel the need for that big dollop of carbs on the side and would rather have another slice of meat or a chunk of nice cheese. If I'm cooking for everyone however it might be cauliflour cheese or cauliflour (potato) salad. If its meatballs or bolognaise they have the norm and I have a low carb pasta substitute.If I have to dish up chips for them I might make myself some fries with halloumi grilling cheese. Likewise anything over toast or a grilled cheese sandwich I use low carb bread.
As @Antje77 rightly says have a dig around in the forum. There are a load of ideas. Google will also give you a low carb option for just about anything. I had 4 carb haggis last week!

Although it's possible to buy low carb alternatives, most are expensive and not very good
I usually just increase the protein and healthy fats (those in meat, fish, dairy and eggs and olive oil and butter) instead. That helps you feel full for longer. Over time your body adapts and you need less and want even less.

Oh, and weight loss is usually a happy side effect
 
I was the same - pre-diagnosis we pretty much lived off potato/rice/bread/pasta and fruit.

For most of the time I have just dropped them entirely, and replaced them with (mainly) more green veg. Cabbage, spinach, kale, leeks, that sort of thing - all work, and you can add a bit of chili, cream or cheese for a change.

Swede is not too bad for carb content, and riced cauliflower goes OK with curries and chillis. There's various low-carb "breads" but they are much more expensive and it really isn't bread - but OK for some things - eg toasted with Marmite.
 
Like @Margarettt I hardly bother with sides anymore and stick with the protein (meat, cheese, eggs, sometime fish) If I’m having curry it usually goes over roasted cauliflower florets. I do sometimes have celeriac chips too.
