Hi Does anyone know if eating meat in this instance lamb and slow down the conversion of carbohydrate into glucose and therefore leave BG stable. On sunday I had lamb for lunch and I know mashed potatoe is a no no but my wifes is heavenly so I over indulged. However when I tested by BG 2 hours later it was 5.4 which is good.Any advice on this would be helpful as I have stayed away from potatoe for months

I suspect that at 3 or 4 hours you may have been higher.

The fat content of lamb is anything from 16.3 to 20.4 per 100gm. This would slow down the absorbtion of the Carbs in the mashed potatoes and also in the lamb itself.

Forget about 'the wagon'.

If you want to eat the mashed potato's... do what you did. eat a small a mount, and test, test, test. There's no point denying yourself food that you love which may be perfectly good for you.

Keep an eye on the fat and carb content, and see what happens, especially if you obviously miss them that much.
