I sometimes boil cauli rice in coconut milk with seasoning and add grated cheese when it is cooked. With curry I usually stir fry it with butter and coconut oil adding some spices. I do my own fresh in the food processor
How come it has such s long date? Sounds different from the one I buy from Tesco in the fresh veg isle. The one I buy is just fresh grated cauli with a 3 day shelf like - sounds interestingThought I'd bump this thread up as I've just been to Waitrose and bought up the last twelve packets of the Indian Pilau type Cauli Rice they had on the shelf. The expiry date on them is November 2016, and I should use them all by then.
They are on offer at 99p in Waitrose at the moment, so worth trying if you haven't yet. But as stated above it is better fried with some spices rather than microwaved in the pouch.
