I just wrote about this on Hazel's blog. I've been thinking about trying it for a while but didn't get round to it. Daughter with T2 has spent Christmas with us so as she needs to have calories carefully controlled too, I bough some of the Pilau variety. I was actually looking forward to trying it (open mind re tastes) but I was disappointed this time. While it was heating, I thought the smell was horrible, and when I pinched a teaspoon of her meal - I thought the taste was horrible too!!:yuck: She loved it though, so that was good.

I shan't be adding this to my list of lower carb goodies I'm afraid!

I tried that and the 'Mediterranean' style variety too. I didn't think much of either of them unfortunately. I was hoping to find a healthy alternative to rice, but I will be staying with basmati rice, but in much smaller portions. I used to eat three handfuls (pre-cooking) which was a plateful when cooked. Now I cook one handful which makes about a fist size portion when cooked, and only eat rice once or twice a week.

I find the smell of cauli being microwaved is very unpleasant.
Prefer to stir fry it for a few mins than nuke it.

And I always have it tarted up with herbs, spices and/or a curry or cheese sauce.
- not so pleasant childhood memories of boiled cauliflower... shudder.

I always stir fry it would think microwave makes it wetter? I use a spring onion and a few herbs when serving it along side something or I make fried rice with everything thrown in with curry spices. I have also used it to make crusts for pizzas and pies.

I used to do my own grating but find the packs from tesco much more convenient and far less messy! The Mediterranean one is mostly carrot so a bit higher in carbs just so you are aware.

Glad your daughter liked it at least @ladybird64 :)

try it roasted in the oven.. I grate it then oven bake for about 20 minutes with a bit of olive oil and pepper... other things to taste.. I find it quite ok like that..some in as I type..

I agree that stir fried cauli rice is less funky than microwaved. I like to stir fry in coconut oil then add spices etc

Definitely make your own from fresh cauli (I use my food processor but have also chopped it with a knife which takes a bit longer). Stir fry with the usual suspects - spring onions, garlic, ginger, peas, egg, soy sauce - absolutely lovely and no brassica whiff...
When making it to accompany curries, I would fry it first with cinnamon stick, mustard seeds, cardamom, bayleaf, salt & pepper, then add a tiny amount of boiling water to steam it (being careful not to over-cook). I've also used it for veggie paella without cooking it first - it gets enough cooking when you mix it in with the other ingredients.

Well I saw they were doing the Cauli Rice half price in Waitrose today (99p), so I thought I'd give it another try. I took your collective advice and fried it in coconut oil, with some garlic, cumin seeds, chilli powder and dessicated coconut. I had it for supper with some spinach and lamb curry, and dhal. It was quite nice and I will stock up with a few pouches while the half price offer is on.

That packeted cauli rice isnt the best. I was using cous cous with salads but felt it was jis a dod of mush when cooked. The giant cous cous from tesco is much better obv small portion.

I sometimes boil cauli rice in coconut milk with seasoning and add grated cheese when it is cooked. With curry I usually stir fry it with butter and coconut oil adding some spices. I do my own fresh in the food processor

Thought I'd bump this thread up as I've just been to Waitrose and bought up the last twelve packets of the Indian Pilau type Cauli Rice they had on the shelf. The expiry date on them is November 2016, and I should use them all by then.

They are on offer at 99p in Waitrose at the moment, so worth trying if you haven't yet. But as stated above it is better fried with some spices rather than microwaved in the pouch.

I do my own cauliflower rice - blitzed in a processor, then stir fried in butter with some chilli flakes. Really tasty. My non-diabetic family love it too.

How come it has such s long date? Sounds different from the one I buy from Tesco in the fresh veg isle. The one I buy is just fresh grated cauli with a 3 day shelf like - sounds interesting

@lovinglife They do sell it in Sainsburys too, and I think in Tesco. It comes in four different varieties, Plain, Mediterranean Style,Indian Pilau, and Lemon Grass.
Probably ASDA too, but the usual price is £1.99.
