I've been getting bored of my low carb porridge, so this week I've been having poached eggs and tinned sardines or mackerel. I discovered that you can make poached eggs in the microwave in less than a minute! Just crack two into a cup, put a bit of water in cover with good quality cling film and put them in for around a minute. I discovered this blog dedicated to microwaved eggs!... http://www.buzzfeed.com/arielknutson/easy-ways-to-cooks-eggs-in-a-microwave

Some great ideas, but you will obviously need to omit the bread used in some of the recipes.

Thanks for the tip! So much easier than boiling the pan! I've been finding the Livlife bread isn't bad for making eggy bread too.:)

I know, it's now so convenient to cook some eggs! I really need to start looking for this magic bread everyone talks about!

Mmm....much prefer poached eggs cooked in a pan, likewise with scrambled eggs.

Ooh scrambled eggs in the microwave are the best - just depends how you cook them! Couple of beaten eggs, slug of milk (lactofree in my case) and a knob of butter. In the (very powerful microwave) for 1 min 20, beat lightly and leave to stand for 1 minute. Superb.

I'll have to give the poached microwaved eggs a go though.

Smidge

A dash of cream is nice and adds a nice touch to scrambled egg in the microwave.:)
I think I might be the only person in the world that hates having milk or cream in their scrambled egg! I much prefer to put in a little bit of butter and some chives :D

Chives is good as is a good sprinkling of ground black pepper. I cook it in a pan with a bit of melted butter in the bottom and the eggs whisked with milk and a small sprinkling of a mature cheddar cheese, I don't like it too overcooked but like it where it soaks into the toast:)

Oooh going to 'try' this tomorrow !
Thank you for posting it .

I'm going to try the microwaved poached eggs tomorrow. It's just the sheer convenience of it, 1 min in the micro and they're done.

Yeah your right Sam that it's much quicker to use the microwave, however I'd sooner get up 5mins sooner and cook them in a pan, I find the eggs go a bit rubbery when done it the microwave.
