you should get a blood glucose monitor, some strips and test your blood periodically.........when you wake, before meals, and 2 hours post meals........
this will tell you what foods work for you and what don't......
I wouldn't know how many carbs is good for you personally but choosing carbs that have a slow, gradual effect on the blood sugar is a good idea, LOW GI.....
you still have insulin control, so helping your pancreas react to the glucose from the carbs is wise....
