Need your help whitbyjet

I was going to PM you but thought I'd post it in case others have same problem.

I have just made your chocolate chip cookies and they are excellent. I'm so happy

My problem is I also tried to make low carb muffins. They taste fine but the top of them looks like a crumle rather than smooth. I actually thought it would crumble all the way through but it is spongy on the inside.

Where have I gone wrong or is this normal? I used this recipe from the internet. Maybe you have a better one.

Also made the cookies from another thread with peanut butter.
Wasn't too keen on them-too spongy. Maybe I didn't do it right.
It's been a long time since I did any baking-maybe I've lost my touch

Pleased you enjoyed the cookies, all recipes I post are tried and tested by myself first.
I am not sure why the muffins turned out crumbly on top, it could be that there was too much baking powder in them?
Which flavour muffins do you want to make, have you checked out the thread 'Chocolate Paradise' there are chocolate muffin recipes and cakes listed, the cake mixtures can be used as muffins as well.

Have you tried loiuse b's blueberry muffins? They are lovely as well.

Wish I'd looked there first. Will try them next weekend.

I only put in the amount of baking powder in the recipe. My spoon was heaped though.

They are edible but don't know if I'd make them again.

Marina, these are my favourite chocolate muffins, but try other recipes as you go along, you might prefer other recipes.
Chocolate Muffins

100 g ground hazelnuts

100 g ground walnuts

80 g melted butter

80 to 100 g dark chocolate (preferably 86%)

sweetener equiv to 1/2 cup of sugar

seeds from a vanilla bean (or equivalent vanilla extract)

120 g cream cheese

3 large eggs (or 4 small)

1 heaped tsp baking powder
________________________________________________________________________________

Mix the nuts together. Melt butter and chocolate together over low heat. Whisk together eggs, cream cheese and sweetener, stir in the melted butter and chocolate, finally stir in the nuts, mix well.

Taste the mixture, you might want to add more sweetener. Fill into muffin cases, bake at 180 degrees for 15 - 20 minutes. Leave to cool before eating.

Moderator Louise b's Blueberry Muffins recipe:
250g ground almonds
1 Tbsp baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
vanilla essence/extract
a squeeze of lemon juice
150g unsalted butter , softened
15g of sweetener of your choice
2 large eggs
200ml greek yogurt or soured cream/creme fraiche
120g blueberries

combine the ingredients just as you would any muffin mix and divide mixture between 12 muffin cases and cook for about 25 mins on on 180.
 
Don't think I can wait til weekend. I'm drooling already.

I still have 200g ground almonds left. Can I use that instead of hazelnuts and walnuts?
(I gather this is replacing the flour)

Can you tell me the purpose of the cream cheese in the mixture?

Don't think I fancy the blueberry ones but thanks anyway.

If these work then I think I can stick with the low carb diet and snack on these

Hey Choccie!

I bake the chocolate ones (or very similar) but make little mini muffins. Go and buy two mini muffin trays and some mini muffin paper cases -they are about an inch round and have very few carbs, so you can have three a day for the carbs of one large one - well, it works for me :lol:

p.s. Yes, you can use ground almonds rather than hazelnut and walnuts - just a slightly different flavour.
