new diabetic

i`ve joined this forum to try and get information for my brother, he has recently been told he has diabetes 2, he is 73 years old, but hasn`t been given any advice on what he can and cant eat, naturaly he has stopped sugar and gone onto sugar substitutes, his wife is trying to do her best when getting food, but he has always had a sweet tooth, loves cakes and pastries. red meat which some one said he shouldnt have now, also how do carbohydrates effect diabetes ? and when reading food labels, how do you know what sugar levels are safe to eat.

Your brother seems to have been left in the dark about his management. Has he been given a meter and test strips? This is the most essential tool needed to see which foods affect his blood sugars.
Ideally they should be between 4-7 on waking and no more than 8.5 two hours after a meal.
Carbohydrates turn to glucose when being digested so he need to be aware that potatoes, bread, cereals, rice and pasta may raise his blood sugars. Keep a food diary to see what is happening. He may have to cut the portion size or eliminate them from his diet. Tell him to keep away from cakes, biscuits and pastry, bread and any other products made with white flour.
Red meat is not prohibited.

thank you, catherine cherub :) your reply will be very helpful i`m sure, unfortunately he hasnt been given a meter, but i told him to insist on getting an appointment with the diabetic nurse for himself and his wife as she as to buy and cook for him, she needs to know what to get. also to ask for a meter so he knows whats happening when he eats, theyhave managed to get an appointment at the end of the month, so hopefully they might get some assistance at last, thanks again.
