During the long hot summer my first meal of the day was often a salad - I had a bag of mixed salad, walnuts, beetroot, radish, cucumber, red or yellow sweet pepper, celery, a few peas, - anything in the fridge, with coleslaw and oil and vinegar dressing, a couple of hard boiled eggs and some cheese.
In the evenings I would have a stirfry with courgette, aubergine, mushrooms, green sweet peppers, the outer stems of celery, bean sprouts - anything I found in the fridge.
Although I am not vegetarian I do seem to eat a lot of vegetables.
Do be sure to have enough fat in your diet, for energy.
Now that it is colder I have cauliflower cheese quite often - it is simply almost cooked cauliflower, covered in cream cheese and then in a grated hard cheese - various herbs or spices can be added, but it is basically that, placed in a warm dish in a warm oven and left for the cheese to melt and a light golden top to develop.
Low carb cooking does tend to be very simple - I think it is simpler than 'normal' eating.
