Hi I am a newly diagnosed t2 although I have made a drastic change to the type of food I eat, "I was a carb addict" loved bread. I also love to cook so after a month of not baking, I have started to research different flours so I can bake health cakes, and biscuits as treats. In the spirit of sharing here is a recipe for a lemon sponge cake I made today. See next message for recipe.
200g Almond Flour (20g of carbs)
75g Butter
50g of soft light brown caster sugar (50g carb)
4 large eggs
Lemon zest, small drop of lemon essence 1 rounded tsp baking powder
Mix all together and place in lined loaf cake tin. Bake in fan oven 140 for 30-45 mins it will take a while keep an eye on it. Then test like any other cake and when down out on rack to cool down, after a month of no cake in my house half is nearly gone. I a hoping that due to lower carb I should be able to have a small piece as a treat.
I made some lovely rock cakes and choc cookies with almond flour the kids loved them. I had one of each on different evenings and did not cause a spike so a result. If anyone wants recipes let me know and I will post.
