Well....i have recently been told of a new item for my CV. So....to celebrate i thought i would make some diabetic cookies to pass the time! Its a problem which has been bubbling for a while but i have now failed the 1c test 3 times and my fingers look like teabags....full of holes.
Be great to chat with others and share new life stories and ways to move forward and enjoy new things.
Will post a picture when they are cooked (unless they look like bin fodder!!)

Hello and welcome to the forum from another type 2. It certainly wasn't what I wanted to add to me CV either.

I found that after testing very regularly for a while it started getting a lot less painful and 'honey'. I think it is definitely something you get better at. I also find warming my hands helps.

Good luck with the cookies. I keep very low carb but there are a lot more low carb options around now which is great. Here in Australia we seem to have more than I was able to identify when in the UK briefly. My body doesn't tolerate Malatoil (spelling?) so that limits my options.

Welcome and good luck.

Enjoy your baking! No-one else usually gets the pleasure? of sharing my low carb baked goodies with me, so I don't give a (insert rude word here) what they LOOK like just as long as they TASTE OK! :hungry::greedy: But don't be afraid of showing off your results.

I use nut, etc flours - mainly ground almonds, hazelnuts, walnut or pecan meal and occasionally sesame flour or flax/linseed, and use erythritol and/or stevia if I want a sweetener. I've fought a losing battle with coconut flour though. There's endless scope for experiments once you get started.
