Newbie - help needed mapping food & the effects

Hi everyone, I've recently been diagnosed at T2 & am following the LCHF diet, I'm also just started testing. My question as I'm very confused is what is the best way to record how different foods affects my bgl. Im recording everything I'm eating & testing before eating and then 2 hours later or approximately. But what about snacks? Do I have to test before & after them and if I have a snack just before the 2 hour testing doesn't this interfere with the result? Also what if I change 2 or 3 different foods in a recipe?.

Also what's the best & easiest method of calculating carbs?

I don't know what the best way to record events is but I just used a spreadsheet. I tried a software package but by the time I had put all the information into it I felt it was a bit of a waste of time.

You do not need to test everything from day one. Pick a meal time and concentrate on that until you know what you want to know about it then move to another mealtime. Trying to do everything at once might make you give up.
