Newbie parent question for Type 1

Hi There, I was wondering if anyone is able to answer what will hopefully be a quick question. My 15yo was diagnosed T1 almost 4 weeks ago when I took her into A&E with ketoacidosis. She is now taking 20 units of Lantus in the evening and Novorapid for meal times with a 10:1 ratio for carbs. Her BG has been slowly coming down since being in hospital and is usually around 7-10 in the morning. She is having a low carb breakfast (eggs/sausages and sometimes a small piece of toast) which usually means she takes only 2-4 units of Novorapid before she eats. 2 hours after eating her BG is usually a bit higher (12-15). We are new to Diabetes and have been researching as much as possible and would like to go down the low-carb route, but it will take a bit of time to adjust. I have ordered Dr Bernstein's Diabetes Solution but haven't received it yet. So my question is this: should she be taking her Novorapid a little later after eating a very low carb and high fat/protein breakfast or lunch? And when should she check her BG after eating? All the advice we have been given by the hospital is based on having a large amount of starchy carbs.

The dosing of insulin for high fat/protein based meals is really trial & error, for myself it means a split-dose of insulin taking a small amount up front and the rest 2 hours after, but other people's experiences vary so that is why it's best just to see what results you get and find your own way.

There's a book called Type 1 Diabetes in Children, Adolescents and Young Adults by Ragnar Hanas, by all accounts it's very good and should help you all understand the condition better.
